Glossary — BOH, OS&E;, HACCP, Operational Readiness Assessment

BOH — Back of House

The operational and staff-only areas that support hotel operations, including kitchens, stewarding, storage, receiving, laundry, engineering spaces, and staff circulation. 

OS&E; — Operating Supplies and Equipment 

The movable operating items required to run a hotel or venue, including kitchen equipment, tableware, linens, uniforms, housekeeping tools, and operational smallwares

HACCP — Hazard Analysis and Critical Control Points

A food safety management system used to identify, monitor, and control food safety risks throughout storage, preparation, cooking, and service.

Operational Readiness Assessment 

A structured review conducted before opening to confirm that systems, staffing, facilities, procedures, and operational departments are prepared to operate safely and effectively.
